Steak Tacos Recipe

Makes 20 street tacos

Overnight to marinate, then takes 15 minutes to cook

-what you need-

  • 2 pounds skirt steak
  • 20 soft shell street tacos
  • Jasmine rice cooked, about 3-4 cups
  • Sour cream
  • Pico de gallo, recipe below
  • Cilantro for garnish

Marinade

  • 3 Tbs olive oil
  • 1/4 cup low sodium soy sauce
  • 2 Tbs balsamic vinegar
  • 1 Tbs brown sugar
  • 1/2 tsp ground pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 3 garlic cloves, pressed
  • Handful of fresh cilantro torn with stems

Pico de gallo

  • 5 tomato’s chopped, I used Roma
  • 1/4 red onion chopped
  • 2 Tbs fresh cilantro chopped
  • 3 garlic cloves pressed
  • Dash onion powder
  • Dash garlic powder
  • Juice of 1 lime
  • Salt and pepper to taste

-what to do-

  1. In a large bowl combine all the ingredients for the marinade.
  2. Place your skirt steak in the marinade and coat, marinate overnight. This is a must.
  3. The pico can be made the day before or an hour before you are eating. Either way it comes out delish. To make the pico, mix all the ingredients in a bowl and place in fridge.
  4. After the steak marinates overnight, and you are ready to cook, bring steak to room temp while you heat up your skillet. Medium high heat.
  5. Add a very small amount of oil, our oil is in the marinade so that should help but if you aren’t using a nonstick pan, use more oil.
  6. Sear your skirt steak until charred, 6-8 minutes per side. Steak will be soft when you poke it. If you don’t want a pink center, cook an additional few minutes per side.
  7. Let steak rest and while it rests, char your tortillas! I did a quick char over my gas stove over the flame, if you don’t have a gas stove you can warm and brown them in a skillet with a little oil.
  8. When steak has rested you are going to cut it in half since it’s so long, then you are going to cut it again against the grain into thin strips, then cut again into small cubes.
  9. When ready to serve, take your charred tortilla and scoop in some rice, some steak, some pico and then top with sour cream.
  10. Serve the steak tacos with additional pico & sour cream on the side, some extra rice and garnish with cilantro and lime!
