Potato Soup Recipe

makes 6-8 cups

takes about 2 hours

-what you need-

  • 4 large baked potatoes, cooked
  • 1/2 pound of bacon
  • 2 Tbs olive oil (or sub with bacon fat)
  • 2 Tbs butter
  • 1 medium sweet onion diced small
  • 10 cloves of garlic, pressed
  • 1/2 cup flour
  • 2 cups vegetable broth (or sub with chicken broth)
  • 1/2 tsp fresh black pepper
  • 3 1/2 cups milk
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 8 ounces fresh grated sharp cheddar (use the block)
  • 6 scallions sliced thin
  • Sour cream for garnish

-what to do-

  1. First, get your potatoes cooked. I cleaned and pricked them with a fork and air fried them at 400 for 45 mins to an hour until fork tender.
  2. In meantime, cook your bacon until crispy. I cubed and cooked my bacon in a large pot. We want the bits left behind for the soup. When bacon has cooked, remove and let drain on paper towel.
  3. At this point you can reserve 2 Tbs of the bacon grease but I poured out the bacon grease, and opted for 2 Tbs olive oil. Heat to medium low heat.
  4. Next add in your butter and chopped onion and cook until translucent, scraping up the browned bits in the pot from the bacon, about 15 minutes.
  5. Next add in your garlic and cook another 5 minutes.
  6. Add in your flour, stir and cook for another 10 minutes until thick and bubbly.
  7. Next add in your vegetable broth and mix until combined and thick, about 10 minutes.
  8. Then add in your milk, mix until combined and thickened about another 10 minutes.
  9. Now the potato! Slice your baked potatoes in half and scrape out the insides into your pot. Save the shells for potato skins!
  10. Next add in your seasonings and stir until combined. Add more salt to taste if needed. If you want a thinner soup add a touch more broth here.
  11. Lastly, add in 4 ounces of your shredded cheddar cheese, half of your crumbled crispy bacon and half of your sliced chives. Mix and heat through for 5 minutes.
  12. Now ready to serve. Ladle your soup into bowls, garnish with your reserved bacon, cheese and scallions. Top with a little sour cream and ENJOY!!!!
