
Freddys Beer Pretzel Recipe
takes about 2 1/2 hours
makes 5 large pretzels
-what you need-
Pretzels
- 1 packet active dry yeast, 2 1/4 tsp
- 1/2 cup warm water, 110 degrees
- 1 tsp brown sugar
- 3 Tbs melted butter, cooled
- 1 cup of your favorite pumpkin beer, room temp
- 4 1/4 cup flour (510 grams)
- 1/4 tsp salt
- 1/2 tsp pumpkin pie spice
- 1/8 cup brown sugar
- 1/2 cup baking soda
Coating
- 4 Tbs melted butter
- Cinnamon sugar
-what to do-
- In a bowl, combine your packet of active dry yeast, warm water and 1 tsp brown sugar. Let proof for 10 minutes.
- Once done, add your proofed yeast to a stand mixer with a dough hook attachment
- Next add in your melted butter and beer and mix until combined.
- Next, with speed on low, add in your flour, salt, pumpkin pie spice and brown sugar and mix until dough ball forms and does not stick to sides of bowl.
- Cover your dough and let rise for an hour and a half until doubled in size in a warm area.
- When dough is done rising, take your pretzel dough out and cut into 5 equal pieces.
- Roll one piece of dough at a one into a rope then shape like a pretzel and place on a baking sheet. Repeat until all are done.
- Let pretzels rise under a cloth as you get your water ready.
- Preheat oven to 350 and bring your water to a boil in a large heavy pot. Just before it reaches a boil add in your baking soda slowly.
- Drop in your pretzels and cook 30 seconds on each side, then remove with a slotted spoon and place back on baking sheet.
- Once all pretzels have boiled, bake until golden brown, about 10-15 minutes. Keep an eye on them.
- When pretzels are done, brush on some melted butter and coat with cinnamon sugar.
