
Orecchiette with Hot Sausage & Broccolini
Makes 6-8 ervings
Takes about an hour
-what you need-
- 1 pound orecchiette pasta
- 3 Tbs olive oil
- 1 large sweet onion, chopped
- 4 gloves garlic, pressed
- 1 1/2 pounds hot pork sausage
- 4-5 cups chopped broccolini
- 3/4 to 1 cup pasta water
- 1/3 cup chopped jarred roasted red peppers
- 1/2 cup freshly grated Parmesan cheese, plus more to taste
- Season to taste

- In a large pot with water, bring to a boil.
- In the meantime, in a large pan, with a preferable 2 inch lip over medium heat, add olive oil and onion and cook until onions start to caramelize a bit, about 10 minutes.
- While the onions cook, remove your hot sausage from its casing, press your garlic and chop up broccolini. I used part of the stalks of broccolini but about half the stems. It may seem like a lot but it will cook down.
- At this point your water should be boiling, add your pasta and cook until al dente.
- Once onions are starting to brown, add in your garlic, cook for 3 minutes then add in your hot sausage.
- Brown the sausage links for about 10 minutes then break up into smaller bite sized chunks with a wooden spoon.
- Once sausage is cooked through, reduce heat to low, add in your chopped broccolini, stir and cover with a lid for 5-8 minutes.
- When pasta is done, reserve a cup of the pasta water and drain the rest.
- Your broccolini should be vibrant green, and you will now add the pasta water to your sausage and broccolini. I did not use the full cup, I used about 3/4, but depends on how saucy you want your dish to be once you add the parm, so start with little and add more as you go.
- Next add in your full pound of cooked pasta and your chopped roasted red peppers to the sausage and broccolini. Mix well.
- Next add in your freshly grated parmesan and mix well until a light cheese sauce forms.
- At this point add in your desired seasonings. I added garlic powder, onion powder and salt and pepper to taste.
- Finally, and most importantly, ENJOY!
