Chicken Cutlets

Makes 8 chicken cutlets

Takes about 30 minutes

-what you need-

  • 1 pound of chicken tenders
  • 2 large eggs
  • 1-2 cups of your favorite bread crumbs
  • Your favorite seasonings
  • Flaky salt
  • Olive oil, about 1 cup

-what to do-

  1. Grab your chicken tenders and let them sit out for about 10 minutes at room temp. This helps get the tendon out easier.
  2. Grab the tendon on the chicken, it’s the white piece going through the tender. Pull the little bit of excess hanging off it using one hand and using a fork, slide down the tendon pulling it completely out from the tender and discard. If you don’t really care eating this, you can leave it in but it gives me the ick!!
  3. Once your chicken is prepped, season to your liking.
  4. In a separate dish crack 2 eggs, add a heavy pinch of salt, and whisk.
  5. Add your tenders to the eggs and coat and let sit.
  6. In a separate dish add your breadcrumbs and any added seasonings you like. I like to add some fresh grated parm to mine and garlic powder.
  7. In a heavy pan on your stove, add your oil and heat to medium heat. You want the oil to come up about half an inch.
  8. When oil is hot, take your tender and shake off excess egg, place into bread crumbs and coat. Next press down slightly into the crumbs, the tenders are fragile but you will be able to flatten them out creating a thin cutlet. Take your time and be gentle, pressing to making sure the cutlet is well coated with breadcrumbs on both sides.
  9. I fry as I go, so once your cutlet is ready, add to the hot oil and fry on both sides until golden browned. I did 2 at a time and coated the tenders as I went. If your house is humid, don’t do these in advance, the breading will become almost like a paste from the humidity as it sits.
  10. Once tenders are done, should only take a few minutes, place them on a plate or wired rack to cool and immediately salt them. This is very key!
  11. Repeat until all cutlets are fried and enjoy with your favorite pasta and sauce!!!
