Greek Chicken Kebabs

Makes 4 large kebabs

Takes about an hour

-what you need-

  • 2 packs chicken tenders, about 14 tenders
  • Olive oil, 3 Tbs
  • 1 tsp turmeric
  • 1 tsp dried oregano
  • Salt and pepper
  • 3 large bell peppers
  • 1 large red onion
  • 4 metal skewers

-what to do-

  1. Preheat your grill, you want it really hot for the char marks.
  2. As grill heats, prep your chicken. I used tenders, took the tendon out and cut each tender into 2 pieces
  3. Add your chicken to a bowl, add oil, turmeric, oregano, salt and pepper and mix well. Set aside.
  4. Next prep your veggies. Cut each bell pepper in half, remove seeds and cut each half into 2 inch pieces. Repeat with your onion, slice it in half then slice again in 3 sections, you want it the same size as the bell pepper. Set aside.
  5. Now to assemble, take your skewer and layer on with bell pepper, chicken, onion, chicken, bell pepper and so on. This will make 4 fully loaded kebabs.
  6. When you are done assembling, time to grill. Place the kebabs on the grill and cook about 8-10 minutes on each side until you get those nice grill marks and chicken cooks through. I gently press down on the kebabs to make sure each layer hits the grates of my grill.
  7. When done, place kebabs on a foil lined baking sheet, cover with foil and let rest for 10 minutes.
  8. Serve with your favorite sides, I paired mine with tomato orzo and fresh cucumber and feta. You can find the tomato orzo recipe here, it is insanely good!
