Makes 1 large sandwich
Takes about 25 minutes
-what you need-
- 6 slices crispy bacon
Toasted Bread
- 2 slices thick sourdough bread (this is a very juicy sam so you need thick bread to hold up to the juices)
- 2 Tbs mayo
Marinated Heirlooms
- 2 thick Heirloom tomato slices
- Pinch of salt
- Pinch of fresh cracked black pepper
- Drizzle of good balsamic
Sub Style Lettuce
- 1/4 cup mayo
- 1 Tbs red wine vinegar
- Pinch of salt and pepper
- 1/2 tsp dried oregano
- 1 1/4 cups thinly sliced iceberg lettuce
- 1/4 cup thinly sliced red onion
- 1/8 cup chopped dill pickles
- 1/8 cup chopped banana peppers in brine
-what to do-
- To start, get the bacon cooking. You can pan fry or bake in the oven. I bake mine in the oven. Layer bacon evenly on a foil lined pan and bake at 350 for about 15 minutes until just golden browned. When done let sit in the bacon fat for 5 minutes as it cools, this is some magic step I do and really makes the bacon melt in your mouth.
- As the bacon cooks, marinate your tomatoes. You can use any kind but in the dead of summer, heirloom is the only way to go. Slice your tomato into thick slices and lay them on a plate. Season with salt and pepper and a drizzle of balsamic and let them marinate as you work on the rest of the sammy.
- Next, toast your bread. You can simply pop them in a toaster but I cook mine on the stove in mayo. Lather each side of the bread with a thin coating of mayo and pan fry on medium low about 5 mins per side until golden brown then let cool.
- Lastly, the lettuce. Whisk together the mayo, vinegar and seasonings then add in your lettuce, onion, pickle and banana peppers mixing until well combined.
- Assembly time. I add an additional generous shmear of mayo onto the bread (I love Mayo) then top with the marinated tomatoes, bacon and pile on high the shredded sub style lettuce mixture, and then other slice of bread. Cut in half and devour!! This is a very messy sandwich so enjoy this with 10 napkins.
