Pumpkin Coffee Cake

Can you guys believe we are already halfway through October? I feel like it was just the middle of summer and I blinked and BOOM. Fall. Fall, everywhere. Not that I hate it, I love the cooler months and orange and maroon colors. But I mostly love, pumpkin. This coffee cake is my favorite go to coffee cake recipe. It’s sweet, gooey, crumby, spiced and just wonderful. You will LOVE it. What takes this coffee cake over the edge is the sweet & simple icing. It’s like a blanket of dreams. Ok, I think I’ve rambled on long enough. Let’s get to it.

Pumpkin Coffee Cake Recipe

makes 9 servings (8×8 pan)

takes about 1 hour 15 minutes to make

-what you need-

pumpkin batter

  • 1 cup pumpkin purée (not pie)
  • 1/2 cup oil
  • 1/2 cup sour cream
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup white sugar
  • 1/2 cup light brown sugar
  • 1 tsp pumpkin pie spice
  • Pinch of salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups flour

crumble

  • 1 1/2 cups light brown sugar
  • 1 cup flour
  • 1/2 tsp pumpkin pie spice
  • 1 stick butter, melted

icing

  • 1 cup powdered sugar
  • 3 Tbs cream or milk
  • 1/8 tsp vanilla extract

-what to do-

  1. Preheat oven to 350 degrees and line an 8×8 oven safe dish with parchment
  2. In a large bowl, whisk together the pumpkin purée, oil, sour cream, eggs and vanilla extract until well combined
  3. Next, whisk in your sugars then add in your pie spice, salt, baking powder, baking soda and flour. Mix until combined
  4. In a separate bowl, make the crumble. Combine the brown sugar, flour, pie spice and melted butter, mixing with fork until crumbles form
  5. Pour half your pumpkin batter into your 8×8 dish, sprinkle over half the crumble, pour over the rest of your batter then remainder of the crumble
  6. Bake for 45 minutes to an hour until toothpick comes out clean. Once done let cool for 30 minutes
  7. As the coffee cake cools, make your icing. Whisk together the powdered sugar, vanilla and cream. You want a thick icing but drizzle-able
  8. Using a fork or whisk, drizzle the icing over your coffee cake
  9. Cut into 9 pieces and serve warm with a hot cup of coffee and ENJOY!
