
Fudgy Brownies
Makes 9 brownies
Takes about 45 minutes
-what you need-
- 1 1/2 sticks butter (3/4 c)
- 3 Tbs vegetable oil
- 1 1/4 c sugar
- 2 large eggs + 1 large egg yolk
- 2 Tbs vanilla bean paste
- 1 tsp vanilla extract
- 1 c flour
- 1/2 tsp baking powder
- Pinch of salt
- 1/2 c cocoa powder
- 1 c chocolate chips (I used Ghirardelli and a mix of semisweet and bittersweet chips)

- Line an 8×8 baking pan with parchment paper and preheat your oven to 350 degrees.
- In a pan over low heat add your butter, oil and 1/4 cup sugar. Heating some of the sugar through with the butter helps get that crackly exterior top.
- Mixing constantly, bring your butter mixture to a very light boil and then set aside to cool. You don’t want this hot when we go to mix it in or else it’ll cook your eggs.
- In a large bowl with a whisk, combine the remaining cup of sugar, eggs and vanillas and whisk until pale in color and light. The paste really adds a depth of flavor but if you don’t have it just use extra vanilla extract here.
- Next, dump in the flour, cocoa, baking powder, salt and then your lovely cooled melted butter mixture. No need to sift any of the dry ingredients.
- Mix the batter until just combined, don’t over mix.
- Pour the batter into your lined baking pan, top with chocolate chips and bake for 25-30 minutes or until toothpick comes out almost clean. You want a little bit of batter to stick to the toothpick for the fudgy texture.
- Let brownies cool for about 1 hour and then slice and ENJOY!
